While flour has been a staple food in our kitchens for centuries, current methods use genetically modified grains, extracted using aggressive chemicals, with processes of refinement, bleaching, and production that deprive them of their original nutrients. When packaging promises “enrichments” and “natural additions,” the truth of the mega-corporations is that these are synthetic versions of these vitamins and minerals, i.e., they do not do for your body what they say they will do.

Therefore, the tendency to eat without flour wins more and more followers. Today you can find thousands of recipes that will make you forget forever the cookies that, although they are tasty, make you feel heavy after eating them.

1. Almond and butter cookies
To make these treats beat two tablespoons of soft butter or soft coconut oil with a tablespoon of sugar (replaced by stevia, if you prefer). When blended, add a previously made mix with the following:

½ cup of cornstarch
¼ cup finely ground oats
¼ cup almond flour (or ground almonds)
1 pinch of salt
Integrate everything very well, refrigerate, then model the cookies or stretch the dough and cut into shapes. Put them on a plate with baking paper, and cook in a moderate oven for about 20 minutes, until they dry. Let cool before unmolding.

3 cups of oats (or 2 cups and 1 of ground oats)
1 cup grated zucchini (replace with carrots or apples if desired)
1/2 teaspoon baking soda
1 pinch of salt
Vanilla extract to taste (optional)
With everything already integrated, add half a cup of bitter chocolate chips, blueberries, or chopped dried fruits. Cook in a moderate oven, on baking paper, for about 10 to 12 minutes, until they brown just at the base. Let cool before unmolding.

3. Banana Biscuits
Moist and tasty, these flourless cookies are prepared simply by pureeing a ripe banana, then mixed with half a cup of traditional oats and ground cinnamon, to taste.

Add chopped nuts if you like, model your cookies, and cook on baking paper for 12-15 minutes, until they are dry. Let cool before unmolding.

4. Carrot Cookies
Until you taste them, you will not know how tasty and moist they are! Prepare by mixing in a bowl:

2 tablespoons white cheese ( cream cheese )
2 tablespoons corn starch (or cassava, or milk powder, whichever you prefer)
1 or 2 egg whites
1 teaspoon ground cinnamon
4 tablespoons oat bran
1 teaspoon honey or the natural sweetener that you prefer (optional)
When well mixed, add 5 tablespoons finely grated peeled carrot. Integrate and model cookies. Sauté on a plate with baking paper, and cook in a moderate oven for 10 to 15 minutes, until the base hardly browned. Wait for them to cool before unmolding.
